Ingredients

1 bunch or 90g soba noodles

4 tsp soy sauce

1 tsp sugar or 2 tsp mirin

1-2 scallions

Skippable 1 tbsp sesame oil

Optional 1/2 tsp or a splash rice vinegar

Optional 1/4 tsp or 1 pinch instant dashi 1/4 cup dashi

Optional 1in ginger, grated

Optional 2-3 cloves garlic

Optional sesame seeds

Optional sliced nori

Optional 7 minute boiled egg

Instructions

  1. Boil water, drop soba
  2. Make sauce
  3. Pull soba, and chill noodles, and add to sauce

Notes

I like it with sesame oil, sometimes with ginger, usually no dashi. I probably never use real dashi for this, but good soy sauce matters quite a bit
