Ingredients

1 bunch or 100g parsley

; substitute up to half the parsley with fresh herbs of your choice. Feel free to add extra herbs too. Oregano, cilantro, mint, rosemary or arugula can all work

55g or 1/4 cup  olive oil

; use up to a 1/2 cup. A leaner cut of meat might benefit from more oil

2 tbsp red wine vinegar or lemon juice ; zest the lemon if using

2-3 cloves garlic

1-3 tsp of a fruity chili flake or fresh chilis, deseeded

1 tsp dried oregano

Truly Optional 1-3 tsp whole grain mustard; substitute dijon, or whole mustard seeds if making more than well in advance

1 tsp salt

  1. Mince or roughly blend ingredients. Make in advance for the flavors to merge

Ultimately this is just a 4:2:1 herb vinaigrette

This can go well on more than just steak. I like it for breakfast or in a salad
